7UP Pound Cake
Ingredients
1 ½ cups (3 sticks) unsalted butter, softened
3 cups granulated sugar
5 large eggs
3 cups all-purpose flour, sifted
2 tablespoons lemon juice
1 teaspoon vanilla extract
¾ cup 7UP soda
Instructions Preheat & Prep: Preheat oven to 325°F (163°C). Grease and flour a bundt pan.
Cream Butter & Sugar: Beat butter and sugar together until light and fluffy (about 5 minutes).
Add Eggs: Add eggs one at a time, mixing well after each.
Incorporate Flour: Gradually mix in sifted flour until fully combined.
Flavor Boost: Add lemon juice, vanilla extract, and 7UP soda, then mix until smooth.
Bake: Pour batter into prepared pan and bake for 70-80 minutes, or until a toothpick inserted comes out clean.
Cool & Serve: Let cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Optional Glaze: Mix 1 cup powdered sugar with 2 tbsp lemon juice and drizzle over the cooled cake!
