📝 Ingredients:
🔹 For the Cajun Chicken:
2 chicken breasts, sliced
1 tbsp olive oil
1 tsp Cajun seasoning
½ tsp garlic powder
½ tsp smoked paprika
¼ tsp salt
¼ tsp black pepper
🔹 For the Roasted Veggies:
1 zucchini, sliced
½ red bell pepper, chopped
½ red onion, chopped
½ cup cherry tomatoes, halved
1 tbsp olive oil
½ tsp Italian seasoning
Salt & pepper to taste
🔹 For the Rice:
1 cup cooked white or brown rice
🍽️ Step by Step:
1️⃣ Marinate & Cook the Chicken:
Toss chicken slices with olive oil, Cajun seasoning, garlic powder, paprika, salt, and pepper.
Heat a pan over medium heat and cook for 4-5 minutes per side until golden and fully cooked.
2️⃣ Roast the Vegetables:
Preheat oven to 400°F (200°C).
Toss zucchini, red bell pepper, onion, and cherry tomatoes with olive oil, Italian seasoning, salt, and pepper.
Spread on a baking sheet and roast for 20-25 minutes until tender and slightly charred.
3️⃣ Cook the Rice:
Cook rice according to package instructions and set aside.
4️⃣ Assemble & Serve:
Plate the cooked rice, top with Cajun chicken, and add roasted veggies on the side.
