Roasted Chicken with Veggies & Potatoes 




A wholesome, hearty meal packed with flavor and nutrients!


2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper

1 cup baby carrots
1 cup baby potatoes (red & yellow), halved
1 cup broccolini (or regular broccoli)
1 tbsp olive oil
½ tsp garlic powder
Salt & pepper to taste


Preheat oven to 400°F (200°C).
Coat chicken breasts with olive oil, paprika, garlic powder, onion powder, salt, and pepper.
Bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
Let rest for 5 minutes, then slice.

Toss baby potatoes and carrots with olive oil, garlic powder, salt, and pepper.
Spread on a baking sheet and roast for 20 minutes.
Add broccolini to the sheet, toss with a little more olive oil, and roast for another 10 minutes.

Plate the sliced chicken with roasted potatoes, carrots, and broccolini.
Enjoy warm for a delicious, balanced meal!
