Spicy Salmon & Avocado Rice Bowl 🍚

📝 Ingredients:
1 cup cooked white or jasmine rice
1 salmon fillet, cubed
½ avocado, sliced
½ cup cherry tomatoes, halved
½ cup cucumber, sliced
¼ cup red onion, diced
1 cup fresh spinach or mixed greens
1 tbsp olive oil
1 tsp soy sauce
1 tsp sriracha or chili flakes
½ tsp black pepper
½ tsp garlic powder
½ tsp paprika
½ tsp sea salt
1 tbsp spicy mayo (mix 1 tbsp mayo with 1 tsp sriracha)
1 tsp lemon or lime juice
🍽️ Step by Step:
1️⃣ Cook the Salmon:
Toss salmon cubes with olive oil, soy sauce, paprika, garlic powder, and chili flakes.
Pan-sear on medium heat for 3-4 minutes per side until crispy and golden.
2️⃣ Prepare the Rice:
Cook rice according to package instructions.
Fluff with a fork and drizzle with soy sauce.
3️⃣ Make the Salad:
In a bowl, mix cucumbers, cherry tomatoes, and red onion.
Season with salt, black pepper, and lemon juice.
4️⃣ Assemble the Bowl:
Layer spinach or greens at the bottom.
Add rice, salmon, sliced avocado, and salad.
5️⃣ Top & Serve:
Drizzle with spicy mayo and extra black pepper.
