Protein-Packed Breakfast Bowl with Sweet Potatoes & Sausage 



A nutrient-dense, energizing breakfast bowl filled with eggs, roasted sweet potatoes, sausage, spinach, and creamy avocado!


For the Scrambled Eggs:
2 large eggs
1/2 tbsp butter
1/4 tsp salt
1/4 tsp black pepper
For the Roasted Sweet Potatoes:
1 small sweet potato, sliced
1/2 tbsp olive oil
1/4 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp salt
For the Sausage & Spinach:
1/2 cup smoked sausage, sliced
1/2 cup fresh spinach
1/2 tsp olive oil
For the Avocado:
1/2 avocado, sliced


Preheat oven to 400°F (200°C).
Toss sliced sweet potatoes with olive oil, paprika, garlic powder, and salt.
Spread on a baking sheet and roast for 20-25 minutes, flipping halfway.

Heat butter in a pan over medium heat.
Whisk eggs, then pour into the pan.
Stir gently until fluffy, season with salt and pepper.

Heat olive oil in a pan over medium heat.
Add sliced sausage and cook for 3-4 minutes until browned.
Toss in spinach and cook for another 1-2 minutes until wilted.

Add scrambled eggs, roasted sweet potatoes, sausage with spinach, and avocado slices to a bowl.
Serve warm and enjoy!
