Smoky Jalapeno Popper Meatloaf with Creamy Ranch Drizzle
Ingredients:
1 lb ground beef
1/2 lb ground pork
1 cup breadcrumbs
1 large egg
1/2 cup milk
1 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
Salt and pepper to taste
3/4 cup cream cheese, softened
1/2 cup diced jalapenos (seeds removed for milder flavor)
1/2 cup shredded cheddar cheese
1 tablespoon olive oil
1/2 cup sour cream
2 tablespoons ranch dressing mix
Directions:
Preheat oven to 375°F (190°C). In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper.
Shape the meat mixture into a loaf and place it in a greased baking dish or on a lined baking sheet.
In a separate bowl, combine cream cheese, diced jalapenos, and shredded cheddar cheese. Make a small indentation in the center of the meatloaf and stuff with the jalapeno mixture.
Bake the meatloaf for 45-50 minutes, or until cooked through.
Meanwhile, in a small bowl, mix sour cream and ranch dressing mix to create the ranch drizzle.
Once the meatloaf is done, drizzle the ranch mixture over the top and serve immediately.
