Ingredients:
For the Steak:

300g (10 oz) ribeye or sirloin steak
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
For the Caramelized Onions:

2 large onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon sugar
1/4 teaspoon salt
For the Sandwich:

4 slices of crusty bread (sourdough or ciabatta works best)
4 slices of provolone or Swiss cheese
2 tablespoons butter, softened (for toasting the bread)
Instructions:
1️⃣ Caramelize the onions:
Heat butter and olive oil in a skillet over medium-low heat. Add the sliced onions, sugar, and salt.
Cook, stirring occasionally, for 25–30 minutes until the onions are golden brown and caramelized. Remove from heat and set aside.

2️⃣ Prepare the steak:
Pat the steak dry with paper towels. Rub with olive oil, salt, black pepper, and garlic powder.
Heat a grill pan or skillet over medium-high heat. Sear the steak for 3–4 minutes per side for medium-rare (adjust time for desired doneness).
Let the steak rest for 5 minutes, then slice thinly against the grain.

3️⃣ Toast the bread:
Spread butter on one side of each bread slice. In the same skillet, toast the buttered side of the bread over medium heat until golden and crisp.

4️⃣ Assemble the sandwich:
Place a slice of cheese on the toasted side of one piece of bread. Add the sliced steak, a generous scoop of caramelized onions, and another slice of cheese.
Top with the second piece of bread, toasted side in.
Return the sandwich to the skillet and cook over medium heat for 2–3 minutes per side until the cheese is melted and the bread is crispy.
