Ingredients

For the Crust
β 1Β½ cups graham cracker crumbs
β ΒΌ cup butter, melted

β 2 tbsp granulated sugar


For the Cheesecake Filling
β 16 oz cream cheese, softened
β 1 cup granulated sugar
β 3 large eggs

β 1 cup sour cream
β Β½ cup strawberry puree

β 1 tsp vanilla extract

β 2 tbsp all-purpose flour


For the Strawberry Topping
β 1 cup fresh strawberries, sliced
β 2 tbsp granulated sugar

Instructions

Preheat & Prep the Pan β Preheat oven to 325Β°F (165Β°C). Grease a 9-inch springform pan.

Make the Crust β Mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the pan and bake for 8-10 minutes. Let cool.

Prepare the Cheesecake Filling β Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in sour cream, strawberry puree, vanilla, and flour until fully combined.

Bake the Cheesecake β Pour batter over the crust and bake for 55-60 minutes, or until the center is set but slightly jiggly. Let cool completely.

Prepare the Strawberry Topping β Toss sliced strawberries with sugar and chill in the fridge.

Assemble & Serve β Top the cooled cheesecake with the fresh strawberry topping before serving.
