Poor Man’s Husband Casserole
Ingredients:
1 pound (450g) ground beef
1 small onion, diced
2 cloves garlic, minced
2 cups wide egg noodles, cooked and drained
1 can (15 oz) diced tomatoes, undrained
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
1 cup shredded cheddar cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped parsley (optional, for garnish)
Directions:
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the diced onion and garlic to the skillet. Cook for 2-3 minutes until softened.
Stir in the diced tomatoes, cream of mushroom soup, sour cream, Italian seasoning, salt, and pepper. Mix well and simmer for 5 minutes.
In the prepared baking dish, layer the cooked egg noodles evenly. Pour the beef and tomato mixture over the noodles and spread it evenly.
Sprinkle the shredded cheddar cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for 5 minutes. Garnish with chopped parsley if desired and serve warm.
