Ingredients:
For the Cookie Dough:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 teaspoon vanilla extract
1 cup all-purpose flour (heat-treated for safety)
1/4 teaspoon salt
1/2 cup mini chocolate chips
1/2 cup mini marshmallows
1/2 cup crushed graham crackers
For the Ice Cream:
1 quart vanilla ice cream (softened)
1/2 cup chocolate syrup (for drizzling)
1/2 cup mini marshmallows (for topping)
1/2 cup crushed graham crackers (for topping)
Instructions:
Make the Cookie Dough:
In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the vanilla extract and mix until combined.
Gradually add the heat-treated flour and salt, mixing until just combined.
Fold in the mini chocolate chips, mini marshmallows, and crushed graham crackers.
Prepare the Ice Cream Roll:
Line a baking sheet with parchment paper. Spread the softened vanilla ice cream evenly on the parchment paper, creating a rectangle about 1/2 inch thick.
Place the cookie dough mixture on top of the ice cream, spreading it evenly over the surface.
Roll the Ice Cream:
Using the parchment paper, carefully roll the ice cream and cookie dough into a log shape. Tightly wrap the roll in the parchment paper and freeze for at least 4 hours or until firm.
Prepare the Toppings:
Once the ice cream roll is firm, remove it from the freezer and unwrap it from the parchment paper.
